Valençay wines must have a minimum of 70% Sauvignon Blanc but may include local grape Arbois blanc and Chardonnay. Vaillant’s 31 hectares of vineyards are awaiting organic certification. The Sauvignon Blanc is grown on distinctive flint soils, giving a characteristic mineral quality to all the best wines made in the area, while the Chardonnay is planted on sandy lime soils, adding richness to the wine.

At the winery the two grape varieties were gently crushed with one third of the must left on skins to macerate for ten hours before pressing. The varieties were co-fermented in stainless-steel tanks at 16-17° C, for two months, then fermented and aged on fine lees for a further month.

Sébastien Vaillant honed his skills at Domaine des Ballandors before returning to his family domaine in Valençay. With 31 hectares of vineyards on diverse soils, Sébastien's approach includes growing both Chardonnay and Sauvignon Blanc. His meticulous winemaking captures the diverse terroir and produces this harmonious Valençay blend.

This blend is a versatile companion. Go authentic and pair it with the region's eponymous goat's cheese. The wine's grassy, zesty aromas and vibrant minerality go great with fresh seafood or light salads too!

Loire produces famous wines and hidden gems; Valençay is an 80:20 blend of Sauvignon Blanc and unoaked Chardonnay. Its unique flavour profile has fresh acidity from Sauvignon Blanc and the richness of Chardonnay.

In 2004, Valençay locals threw a two-day party to celebrate finally getting the AOC (appellation), formally recognising the unique terroir and the wines' quality. Though not famous, Valençay, in the Loire region, crafts easy-drinking reds and Gamay rosés. The whites, with Sauvignon Blanc leading, have crisp minerality from flinty 
limestone soils. Fuller flavoured blends like 
this are great value versus the more celebrated neighbours Sancerre and Pouilly-Fumé.
